A light, filling and protein-packed meal, this chickpea shakshuka is as delicious as it is healthy. You can enjoy it for breakfast, lunch, dinner or snack on it with some sourdough toast on the side. It has some minimal ingredients and involves a super quick preparation.
This recipe serves 6 people.
1 ½ cups cooked chickpeas
4 medium tomatoes, finely chopped
¼ cup chickpea stock/hot water
1 large onion, finely chopped
1 tbsp finely chopped garlic
2 tbsp extra virgin olive oil
Salt to taste
¼ tsp black pepper powder
½ tsp red chilli powder
½ tsp cumin powder
Fresh Italian basil leaves
Heat oil in a skillet. Fry the onions till they turn translucent. Add the finely chopped garlic and fry for a minute. Add the chopped tomatoes. Stir well. Cover and cook them on low flame till they melt. Season with salt, black pepper powder, cumin powder and red chilli powder.
Add the boiled chickpeas with the stock/hot water and mix well. Cover and cook on low flame for about four minutes until everything comes together. Once done, crack open six eggs directly on the skillet. Salt the yolks. Cover and cook for another two minutes on low flame.
Garnish with fresh basil leaves and serve hot with some toasted bread.
